WELCOME

LOW CARB SURF & TURF TUSCAN SOUP

This soup is for you low carb/ keto lovers!

INGRIDIENTS
1/4 cup diced fresh parsley
1/2 Red onion
3/4 stick of Irish butter
1 bunch of kale
1 container of cherry tomatoes
1 8oz carton of Land of lakes heavy whipping cream
1 pound ground beef 85/15
1 bag of frozen shrimp (thawed precooked tail free)
1 package of Philadelphia cream cheese
4 slices of bacon
4 bulbs of Fresh Garlic
32 oz vegetable broth/stock

STEPS
Add 1 box (32 oz) of vegetable broth on low in a large pot
Stir and bring to a simmer (uncovered)

In a large skillet, turn skillet on medium high
Add ground beef, season (Cayenne pepper, garlic mrs dash, Tony’s seasoning, black pepper) and cook until done

Add 1/2 diced red onion
Add 4 nuggets of minced garlic
Stir until onion, garlic are lightly caramelized

Scrape contents of skillet into pot
Stir until well blended

Return skillet to medium heat

Thinly slice and dice strips of bacon
Sauté bacon 3/4 of the way done

Rinse, slice and dice kale
Add kale into skillet
Add kosher salt (1tsp)
Cook until withered (don’t overcook it, It should be a hunter green color)

Scrape contents of skillet into pot
Stir until well blended

Return skillet to medium heat

Add 1 tbsp of butter into skillet
Add 1 bag of thawed shrimp
Add 1 tbsp ground black pepper
Cook thoroughly

Turn off skillet
Add contents of skillet to pot
Stir until well blended

Add cream cheese to pot
Add 1 carton of heavy whipping cream to pot
Stir in lightly until all contents are well blended

Add entire contents of grape tomatoes to pot
Stir softly

Once entire contents of pot are incorporated
Remove from heat

Ready to serve
